RSDIVINE Wet Grinder: A Batter for Every Dish!

The ubiquitous sound of a wet grinder churning out batter is something many of us have woken up to, particularly in out childhood. The wet grinder is an integral part of every kitchen and household, it grinds fresh, fluffy batter, which can be used to make dosas, idlies, Vada’s and a host of other South Indian delicacies. 1. Dosa:
The dosa is a South Indian crepe that is consumed in Indian households. To prepare the batter you need to soak three parts of rice (steamed rice or idly rice) and one part of urad dal, with a spoon of fenugreek seeds, in water. This mixture needs to be left to soak for three or four hours and then ground to form a fine batter using the RSDIVINE RX5 .

Once the batter is ground to smooth consistency (after about an hour of grinding), it should be allowed to ferment after adding some salt. Once the batter ferments, it will rise filling the vessel. At this stage, water can be mixed into the batter and crispy dosas can be made.

2. Kuzhi Paniyaram:
Kuzhi Paniyaram, the savoury delicacy is loved by many people. The batter for kuzhi paniyaram is prepared the same way as dosa batter. However, onion, tempered mustard and chillies may be added to the batter just before the dish is cooked.

The batter is poured into an ‘Appam’ or ‘Paniyaram’ pan and allowed to cook. After one side of the hemisphere is cooked, it is flipped and the other side is cooked. The paniyaram tastes best when served with chutney.

3. Adai:
This lentil rich crepe is a great source of protein and tastes delicious when consumed with jaggery or coconut chutney. To prepare the batter take equal portions of urad, channa, toor and moong dal. Soak them with half a portion of rice in water for four hours. Grind the batter using the RSDIVINE RX5. Add dried red chilies, coriander seeds, onion, moringa leaves and salt while grinding.

Unlike dosas, the batter for Adai need not be particularly smooth. Once a coarse batter is obtained, transfer it to a fresh vessel and let it sit for 2 or 3 hours. Make crispy adais by pouring and spreading the batter on a hot Non-stick Tawa.

4. Verum Arisi Adai:
Varum Arisi Adai is something many of us wouldn’t have commonly had. It involves making a crepe of rice alone. To make the batter for this dish, you need to soak raw or steamed rice in water for 8 or 9 hours. Once the rice is completely soaked and soft, it needs to be ground to form a smooth batter. Soaked fenugreek and fennel may be added to the batter in the RSDIVINE Compact Wet Grinder 450W.

Poha or puffed rice can be added to make the Verum Arisi Adai fluffier. Once the batter is prepared, it should be spread on a tawa and cooked liked a regular dosa. This recipe is particularly good for those with gas problems, as it eliminates lentils from the recipe.

5. Millet Dosa/Roti:
This recipe is similar to regular dosa, however, to make millet dosa one needs to replace the rice with any type of millet. Foxtail millet, finger millet, barnyard millet or pearl millet should be used as a substitute for rice. Additionally, a combination of rice and millets may be used.

The batter should be prepared by soaking three parts of millet with one part of urad or moon dal, and a spoon of fenugreek seeds. After 3 or 4 hours, the batter should be ground to a fine consistency using the RSDIVINE Compact Wet RX5 Grinder 350W. 6. Aapam:
Aapam is a favourite breakfast item for many. To make appams soak two cups of raw rice and one cup of parboiled rice in water for three hours. Grind using the RSDIVINE RX5 Wet Grinder 450W. While grinding add one cup pf coconut, a spoon of fenugreek, a spoon of yeast and two spoons of sugar. Once the batter is ground, let it ferment overnight.

The batter will double in volume. At this stage add a pinch of salt and water to make a light batter. Prepare the aapam by speaking this batter uniformly on the inner surface of a kadai and cooking it on a low flame. The aapam tastes best when served with coconut milk or khurma.

7. Ulundu Vada:
Who doesn’t love crispy vadas? To make these vadas soak urad dal in water for three hours. Then grind the batter in a RSDIVINE wet grinder. Use very little water to make a thick, yet smooth batter.

Add ginger, hing, a hint of chilli powder and salt to the batter. Once, the batter is prepared, flatten the batter into disc shaped pieces and deep fry in a Non-stick Pan or Kadai.

8. Dalia Dosa or Goduma-Rava Dosa:
Prepare this dosa by soaking three cups of Dalia, one spoon of fenugreek one cup of urad dal and half a cup of poha in water for an hour. 9. Idly:
Idly batter comprises the same ingredients as dosa batter. However, the only difference is that the rice and urad dal need to be soaked separately.
