Ingredients for Blackberry Cupcake Recipe (Makes 12 cupcakes)
Cupcakes:
- 2 cups mashed blackberries with a strainer to get rid of the seeds

Method:
• Set oven temperature to 375°F.
• Use foil or paper liners to make cupcake tins.
• Measure the strained blackberries into a different container and transfer 2/3 cup (3.5 quart mixers), 4/3 cups (5 quart mixers), or 2 cups (7 quart mixers). Mix in the milk and reserve. Keep the remaining blackberries mashed aside for garnish.
• Connect the RSDIVINE Stand Mixer beater. In the bowl, combine the sugar and butter. Set the mixer to speed 4, and beat for about two minutes, or until fluffy and light. After scraping down the sides of the bowl, add the vanilla essence or seeds and blend on speed 4 for about 30 seconds, or until everything is mixed. Keeping the speed at 4, add the eggs one at a time and beat until thoroughly combined.
• Mix baking soda and flour together. After setting the mixer to stir, add the milk mixture and the reserved blackberries, and blend just until combined. Stirring constantly, add our mixture and stir just until combined.
• Pour batter into pans that have been prepared, filling each cup about two-thirds full. If a toothpick is inserted, bake for 18 to 20 minutes, or until it comes out clean. After 10 minutes of cooling in the pans, remove and let cool fully on wire racks. Once cooled, frost with cream cheese frosting and garnish with the leftover blackberries that have been sieved.
• Attach a beater to a mixer and add cream cheese and butter to make frosting. Set mixer to 4 mph and beat until smooth. After scraping down the sides of the bowl, add the confectioners’ sugar and stir until well blended. Increase the speed to 6 gradually and beat until fluffy and light.

Technique
• Turn the oven on to 190°C. Put parchment paper into baking pans.
• Fit the RSDIVINE Stand Mixer with a flat beater. Combine cubed butter and both sugars in the bowl of the mixer. Set the mixer on Stir for one minute, then progressively increase the speed to 4 for an additional one to two minutes. The cookie dough should stay cool; do not overmix. After scraping down the sides of the bowl, add the eggs and vanilla and mix for one minute on speed 4.
• Mix the flour, oats, baking soda, and salt in a another basin. Fill bowl of stand mixer with flour mixture; mix on stir speed until all flour is incorporated. When the chocolate chips are well combined, add them and stir on high speed.
• Place cookies on prepared baking sheets, about 2 inches apart, using about 35 mL of dough per cookie. Bake for 10 to 12 minutes, flipping the pans halfway through, or until the bottoms are golden brown. Take out of the oven, give it a three to five minute rest, then move it to a wire rack to cool. Before baking the remaining dough, allow the baking sheets to cool fully.
